So did you guys enjoy our spinach crepes benedict? You would have them again today, right? I know. I would too but I’m very lazy now. You too? Well then check this out. So by cutting some corners I pulled another one out of the bag. This time quicker and easier. Are you ready?
Now look, the main elements in our previous recipe were the cream cheese spinach crepes, poached egg, prosciutto and hollandaise. Because we wanted to make it even quicker we’ve first taken the hollandaise out. Second we gave up poaching the egg in favour of a runny sunny side up and kept all other ingredients that don’t require cooking. The result is a delicious quick and easy breakfast y’all.
Make the 3 minute crepe batter in 2 minutes now. Your’ve gained experience so you’ll most probably move faster. Make the crepes and than add a slightly thicker coating of cream cheese. Layer the thin, salty prosciutto crude on the cheese, then set the hot sunny side up on top. The result is basically fluffy crepes with creamy, cream cheese and salty, thin prosciutto topped with a luscious runny sunny side up. The colors are amazing. The taste is awesome. - 2 eggs
- 1 cup flour
- 1/2 cup milk
- 1’2 cup sparkling water
- a handful of spinach
- cream cheese
- eggs (for sunny side up)
- Mix in eggs milk and sparkling water.
- Add spinach and mix through well with a hand blender.
- Fry crepes and smear cream cheese on
- Add prosciutto crudo
- Fry a sunny side up and put it on top of the cheese while hot.
